This lot comes from a cooperative of roughly 400 smallholder farmers in the Gedeo Zone of southern Ethiopia. Cherries are hand-sorted, pulped within hours of picking, and dried on raised African beds for 12–15 days. We roast it light-medium to preserve the floral top notes without tipping into sourness — best brewed as a pour-over or in an AeroPress.
